Banoet** ABSTRAK Penelitian ini dilaksanakan di Laboratorium Eksakta Fakultas Teknologi Pertanian Universitas Kristen Artha Wacana Kupang pada tanggal 20 mei 2021 sampai tanggal 5 juni 2021. Tujuannya adalah untuk mengetahui Pengaruh Lama Perendaman Dalam Larutan Gula (sukrosa) Terhadap Proses Pembuatan Manisan Mangga Kering. Penelitian ini menggunakan Rancangan Acak Lengkap(RAL) sebagai rancangan dasar dengan menggunakan 4 perlakuan dan 3 kali ulangan sehingga menghasilkan 12 unit percobaan. Perlakuan terbaik dengan lama perendaman yang berbeda dalam pembuatan manisan mangga kering terdapat pada perlakuan C dengan lama waktu perendaman irisan mangga 9 jam menghasilkan nilai rata-rata rasa manisan mangga kering sebesar 4,822 (sangat suka),dan tekstur manisan mangga kering sebesar 4,778 (sangat memuaskan).
